The freezer trick is less useful, for the obvious reason that outside is already the freezer.
Grease and fitting
Grease at freezing point will not pack properly. A cold sealed hub is also at its stiffest when you want to judge how it turns.
Keep the new bearing and any grease somewhere warm until the moment they are needed.

Making it survivable
- Soak the fasteners the night before, since the oil needs far longer.
- Work on hard level ground, with a board under every stand.
- Warm corroded joints before applying force, not after they resist.
- Keep parts and grease indoors until you need them.
- Stop when your hands stop working, because that is when things get dropped.
Whether to wait
A hum can wait for better weather. Grinding, heat at the hub or any play cannot.
