The short version

Why doing it without a torque wrench fails
On a sealed hub, that nut clamps the bearing inner races together against a precise shoulder. The clamp is what makes the assembly rigid.
Undertighten and the races move relative to each other under load. Overtighten and you preload the rolling elements against the raceways permanently.
Neither error announces itself on the day. Both produce a bearing that hums a few thousand miles later.

Scatter of 30 to 50 percent means a 200 Nm target can land anywhere between 100 and 300 Nm on the same gun and setting.

The other fastener that matters
Overtightened or unevenly tightened lug nuts distort the hub flange and the rotor hat clamped against it.
The result is a pulsing brake pedal that gets blamed on cheap rotors or the new bearing.

If you genuinely cannot get one
The honest answer is to stop before the axle nut goes on, not to improvise.
Everything up to that point is reversible. A bearing preloaded wrong is not, and you will not know until it fails.
